I may have over looked this but I can't find anything on if you have the one handed proficiency can you have more than one weapon of that type? I.e. I have a short sword and would like to have a boot knife as well.

One handed, covers anything up to the max size of that weapon group. So it covers anything under max length of single handed.

Dual wield is a seperate skill.

From M&L chapter 13.2 Combat Specializations:

Knife in Offhand - Must have 30K XP.
What it does: Allows you to carry a throwing weapon / knife / dagger in your offhand while still holding onto a primary weapon.

Dual Wield - Must have 50K XP. Must have knife in offhand skill before adding this ability.
What it does: Allows character to wield dual one-handed weapons they have skills for. This skill does not allow duel wielding of two-handed weapons.

I can have multiple weapons holstered though correct? So I could have my knife in my boot as long as it's not "in hand" like a backup though?

Yep, no limit on how many you carry other than practical weight. Being able to use hand weapons lets you carry one or forty.

Yep you can, but be aware of hits on weapons carried, you can't make armor out of daggers to not take hits....yes, it's been tried.

Also, weapons should be role played as real. So wearing 10 swords that weight 3 lbs a pieces is another 30 ish lbs of stuff to haul. It Should be role played within the realms of physical believability.
